Black Honey, a process
where the coffee is
washed very shortly
after its prolonged
fermentation in order
to leave a greater amount
of mucilage (honey) to
the grain and then it is
dried for approximately
15 days.

The Bourbon cider variety
is a mix between Bourbon
and Typica, receiving the
name Bourbon Sidra for its
notes of apple cider
and lime.
